Preheat your waffle iron according to the manufacturer's instructions.
In a large mixing bowl, whisk together the oat flour, honey, baking powder, and all the spices (cinnamon, nutmeg, ginger).
In another bowl, beat the egg and then add the pumpkin puree, milk and melted coconut oil. Whisk until the wet ingredients are well combined.
Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.
Lightly grease the waffle iron with non-stick cooking spray or a small amount of melted coconut oil. Pour an appropriate amount of waffle batter onto the preheated waffle iron (the amount will depend on the size of your waffle iron). Close the lid and cook the waffles until they are golden brown and crisp.
Carefully remove the waffles from the iron and place them on a plate. Serve immediately with your choice of toppings, such as a dollop of Greek yogurt or a yogurt alternative, fresh berries, chopped nuts, and a drizzle of pure maple syrup.
