Ingredients
  

  • 1 cup oat flour
  • 7.5 oz. pumpkin puree
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • 1-2 tbsp honey
  • 1 egg
  • some chocolate chunks or chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper for easy removal.
  • In a mixing bowl, combine the oat flour, baking powder, ground cinnamon, ground nutmeg, and ground ginger. Stir until the dry ingredients are well combined. Add the pumpkin puree, honey, and egg and mix until it's smooth and well combined. If desired, fold in the chocolate chunks or chips into the batter.
  • Pour the batter into the prepared loaf pan, spreading it evenly. Place the loaf pan in the preheated oven and bake for approximately 35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The baking time may vary depending on your oven, so keep an eye on it.
  • Once baked, remove the pumpkin bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Once completely cooled, slice the oat flour pumpkin bread into pieces and enjoy! It's perfect for a snack or a breakfast treat.
