For tofu
- 5 oz. firm or extra-firm tofu, pressed and crumbled
- 1 tbsp cornstarch
- 1 tbsp olive oil
For Teriyaki sauce
- ¼ cup soy sauce (or low-sodium soy sauce for a reduced-salt option)
- 1 tsp powdered ginger
- 1 tbsp honey
- 1 tbsp ketchup
- 2 cloves garlic, minced
- 2 tbsp water
- 1 tbsp cornstarch (for sauce thickening)
For servings
- Sesame seeds and chopped scallions for garnish (optional)
- Cooked rice
Preheat your oven to 375°F. Crumble the tofu and place it in a bowl. Toss the crumbled tofu with cornstarch and olive oil until evenly coated. Spread the coated tofu on a baking sheet and bake for about 15 minutes, or until it becomes golden and slightly crispy.
In a bowl, mix together the soy sauce, powdered ginger, honey, ketchup, and minced garlic until well combined.
In a saucepan over medium heat, pour the sauce mixture. Add cornstarch and water. Stir continuously until the sauce becomes smooth and thick. This should take a few minutes. Remove it from heat.
Once the tofu is baked and slightly crispy, remove it from the oven. Pour the prepared teriyaki sauce over the baked tofu, coating it evenly.
Serve the teriyaki tofu over cooked rice. Garnish with sesame seeds and chopped scallions, if desired. Enjoy!
