Ingredients
  

Salad

  • 8-10 slices of smoked salmon
  • 2 tbsp cream cheese, softened
  • ½ ripe mango, peeled, pitted, and diced
  • 2 cups arugula or any other greens of choice (spinach, or mixed greens)
  • ½ avocado

Dressing

  • tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, combine baby arugula and diced avocado and mango.
  • In a separate small bowl, whisk together the olive oil, honey, Dijon mustard, lemon juice salt, and pepper until the dressing is well combined. Drizzle the honey mustard dressing over the mango and salad greens. Toss gently to coat the salad evenly with the dressing.
  • Take a slice of smoked salmon and spread a thin layer of cream cheese over it. Roll up the smoked salmon slice, starting from one end, to create a cylindrical shape.
  • Arrange the rolls on a serving platter alongside the mango salad. Enjoy!
