Preheat your oven to 425°F (220°C). Place a baking sheet in the oven while it preheats to get it hot.
Wash and peel the sweet potatoes. Cut them into evenly sized fries or wedges, about 1/4 to 1/2 inch thick. Try to make them as uniform in size as possible for even cooking. Pat the sweet potato fries dry with paper towel.
In a large bowl, toss the sweet potato fries with olive oil until they are well coated. You can also add paprika at this stage for extra flavor. Season with salt and black pepper to taste. Mix everything thoroughly.
Carefully remove the hot baking sheet from the oven (use oven mitts), and spread the sweet potato fries in a single layer on it.
Bake for 15 minutes, then flip the fries using a spatula. Continue baking for an additional 15 minutes or until the sweet potato fries are golden brown and crispy.
Remove the sweet potato fries from the oven and let them cool slightly. Serve them hot with your favorite dipping sauces. Enjoy!
