One Pan Creamy Shrimp Orzo

Ingredients
  

  • ½ lb. shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • ¼ cup crushed tomatoes
  • ½ cup orzo pasta
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 1 cup water
  • ½ cup fresh spinach leaves
  • ¼ cup heavy cream
  • 2 tbsp grated Parmesan cheese

Instructions
 

  • In a large skillet or pan, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp to the hot skillet and cook for 1-2 minutes on each side, or until they turn pink and opaque. Once cooked, remove the shrimp from the pan and set them aside.
  • In the same skillet, add the crushed tomatoes to the skillet, stir in the orzo pasta and toast it for 1-2 minutes, stirring occasionally, until it's lightly golden.
  • Pour in the water, add the dried oregano, salt, and black pepper. Stir well to combine. Bring the mixture to a simmer. Reduce the heat to low, cover the skillet, and let it simmer gently for about 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking. Stir in the fresh spinach leaves until they wilt and are incorporated into the dish.
  • Return the cooked shrimp to the pan and stir them into the orzo and tomato mixture.
  • Pour in the heavy cream and add the grated Parmesan cheese. Stir until the sauce becomes creamy and the cheese is melted. Taste and adjust the seasoning with additional salt and black pepper if needed. Serve your one-pan creamy shrimp orzo hot and enjoy!
