Ingredients
  

  • ¼ cup (1/2 stick) unsalted butter, softened
  • ¼ cup honey
  • 1 small egg
  • ¼ tsp pure vanilla extract
  • ½ cup all-purpose flour
  • ¼ tsp baking powder
  • punch of salt
  • ½ tsp pumpkin spice (or just ground cinnamon and ginger)
  • ¾ cup old-fashioned oats
  • 2 tbsp chopped nuts (such as walnuts or pecans)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and honey until the mixture is well combined. Add the egg and vanilla extract, and mix until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Stir in the old-fashioned oats and chopped nuts (if using). Gradually add the dry ingredient mixture to the wet ingredients, mixing until well combined. Mix until these ingredients are evenly distributed throughout the cookie dough.
  • Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 8-10 minutes, or until the edges of the cookies are lightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your honey-sweetened Christmas oatmeal cookies with a glass of milk or a cup of hot cocoa!
