Salmon Fried Rice

Salmon Fried Rice is a flavorful and satisfying dish that combines tender pieces of salmon with fried rice, vegetables and seasonings.

Ingredients
  

  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • ½ cup mixed vegetables (broccoli, carrot, bell pepper)
  • 5 oz. salmon fillets, skin removed and cut into small pieces
  • 1 cup cooked rice (preferably cooled and day-old rice)
  • 1 large egg, beaten
  • 2 tbsp soy sauce, or to taste
  • Salt and pepper to taste
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish (optional)

Instructions
 

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant.
  • Add the mixed vegetables to the skillet. Stir-fry the broccoli florets, carrot slices, and bell pepper strips for a few minutes until they start to become tender-crisp. You can adjust the cooking time based on your preference for the level of crunchiness.
  • Add the salmon pieces to the skillet and stir-fry for approximately 3-4 minutes until they are cooked through and have a nice golden-brown color. With the help of a spatula, separate them into the flakes.
  • Add the cooked rice and stir-fry for a few minutes to heat it through and break up any clumps.
  • Push the rice, veggies and salmon to one side of the skillet and pour the beaten egg into the other side. Quickly scramble the egg until it's fully cooked. Combine the scrambled egg with the fried rice and salmon in the skillet.
  • Drizzle 2 tablespoons of soy sauce over the rice and salmon. Stir well to evenly distribute the flavors. Taste the fried rice and adjust the seasoning with salt and pepper, as needed.
  • Once everything is heated through and well mixed, transfer the Salmon Fried Rice to serving plates. Garnish with chopped green onions and sesame seeds and enjoy!
