Microwave the chocolate in 20-30 second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Be cautious not to overheat it.
Spoon a small amount of melted sugar-free chocolate into the bottom of each cupcake liner, just enough to create a thin chocolate base. Use the back of the spoon to spread the chocolate slightly up the sides of the liners. Place them into the freezer, so the chocolate set.
Combine the creamy peanut butter, salt, pure vanilla extract, and honey. Mix until the ingredients are well blended and form a smooth peanut butter filling.
Place a small amount of the honey-sweetened peanut butter mixture on top of the chocolate layer in each cupcake liner. Place them in the refrigerator so the mixture sets.
Spoon the remaining melted sugar-free chocolate over the peanut butter filling, covering it completely and sealing the homemade Reese's Cups. Place the muffin tin in the refrigerator for about 30 minutes, or until the homemade honey-sweetened Reese's Cups have hardened. Once they are fully set, remove the honey-sweetened Reese's Cups from the muffin tin and enjoy your sweet treat!
