Ingredients
  

  • 2 salmon fillets, skinless, about 6 ounces each
  • 1 cup fresh baby spinach leaves, chopped
  • ½ cup cream cheese
  • 3 tbsp grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • some thyme leaves (optional, for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a bowl, combine the chopped spinach, cream cheese, Parmesan cheese, minced garlic, salt, and black pepper. Mix well until the filling is thoroughly combined.
  • Make a slit or pocket in each salmon fillet to create space for the stuffing. Be careful not to cut all the way through to the other side. Stuff each salmon fillet with the spinach and cheese mixture, dividing it equally between the two fillets. Sprinkle with some thyme leaves, if using.
  • Place the stuffed salmon fillets on the prepared baking sheet. Bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  • Remove the stuffed salmon from the oven and let it rest for a few minutes. Serve your spinach and cheese stuffed salmon hot, accompanied by your favorite side dishes, such as roasted vegetables, rice, or a simple salad.
