Ingredients
  

For the cake:

  • ¾ cup grated carrots
  • 1 cup blended oats (you can blend old-fashioned oats until they resemble a coarse flour)
  • 1 tbsp all purpose flour
  • 2 tbsp coconut sugar (or honey for added sweetness)
  • ¼ cup vanilla protein powder (optional)
  • 2 tbsp vegetable oil or coconut oil
  • 2 eggs
  • 1 tsp baking powder
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract
  • ½ cup milk of choice
  • some Chopped pecans (use as many as you like for topping and garnish)

For the frosting:

  • Greek yogurt
  • Honey

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch square baking pan or a similar-sized cake pan.
  • In a mixing bowl, combine the grated carrots, blended oats, flour, coconut sugar (or honey), vegetable oil, protein powder, egg, milk, baking powder, ground cinnamon, and vanilla extract. Mix well until all the ingredients are thoroughly combined. Pour the batter into the prepared baking pan, spreading it evenly.
  • Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean and the cake is golden brown.
  • While the cake is baking, prepare the yogurt and honey frosting. Simply mix together Greek yogurt or regular yogurt with honey to taste. Adjust the sweetness by adding more honey if desired.
  • Once the cake is done baking, allow it to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Once the cake has cooled, spread the yogurt and honey frosting over the top of the cake. Sprinkle chopped pecans on top of the frosting for added flavor and texture.
  • Slice and serve your delicious and healthier carrot oat cake and enjoy!
