Healthy Banana Bread (Gluten-free)

Healthy gluten-free banana bread made with oat flour tastes delicious and satisfying! It is nutty, sweet and slightly spicy. This is a good alternative to regular banana bread

Ingredients
  

  • 1 egg
  • 25 g olive oil (or coconut oil)
  • 3 tbsp honey
  • 25 g almond milk or coconut milk
  • 0.5 tsp vanilla extract
  • 1,5 ripe bananas (about 100g)
  • 110 g oat flour
  • 0.25 tsp salt
  • 0.25 tsp cinnamon
  • 0.25 tsp baking powder

Toppings (optional)

  • 20 g chopped chocolate or chocolate chips (can be replaced with raisins or dried cranberries)
  • 20 g chopped walnuts

Instructions
 

  • Preheat the oven to 170°C.
  • Combine olive oil and honey in a bowl. Add an egg in and whisk it for about 2 mins.
  • Mash the bananas in another bowl.
  • Add bananas, vanilla extract and milk to the batter and combine till smooth.
  • Add cinnamon, baking powder, a pinch of salt and oat flour to the batter and mix well.
  • Add toppings to the batter (chopped walnuts, chocolate chips or raisins).
  • Transfer the batter to the loaf pan lined with baking paper. Bake it in the oven for about 50-55min.
  • Take the baked banana bread out of the oven, cool it for a bit and then cut it into pieces. Enjoy!
