Healthy Banana Bread (Gluten-free)
Healthy gluten-free banana bread made with oat flour tastes delicious and satisfying! It is nutty, sweet and slightly spicy. This is a good alternative to regular banana bread

- 25 g olive oil (or coconut oil)
- 3 tbsp honey
- 25 g almond milk or coconut milk
- 0.5 tsp vanilla extract
- 1,5 ripe bananas (about 100g)
- 110 g oat flour
- 0.25 tsp salt
- 0.25 tsp cinnamon
- 0.25 tsp baking powder
Toppings (optional)
- 20 g chopped chocolate or chocolate chips (can be replaced with raisins or dried cranberries)
- 20 g chopped walnuts
Preheat the oven to 170°C.
Combine olive oil and honey in a bowl. Add an egg in and whisk it for about 2 mins.
Mash the bananas in another bowl.
Add bananas, vanilla extract and milk to the batter and combine till smooth.
Add cinnamon, baking powder, a pinch of salt and oat flour to the batter and mix well.
Add toppings to the batter (chopped walnuts, chocolate chips or raisins).
Transfer the batter to the loaf pan lined with baking paper. Bake it in the oven for about 50-55min.
Take the baked banana bread out of the oven, cool it for a bit and then cut it into pieces. Enjoy!
