Easy Sheet Pan Shrimp Fajitas
Sheet pan shrimp fajitas are a Tex-Mex dish made by cooking shrimp, sliced bell peppers, onions, and seasonings on a sheet pan in the oven. Shrimp and Vegetables
- 300 g shrimp peeled and deveined
- 2 green bell peppers, sliced thin
- 2 red bell peppers, sliced thin
- 0.5 red onion, sliced thin
Fajitas seasoning
- 2 tbsp olive oil extra virgin
- 1 tsp salt
- several turns freshly ground pepper
- 2 tsp chili powder
- 1 tsp chili flakes
- 1 tsp smoked paprika
- 0,5 tsp garlic powder
- 0.5 tsp dry oregano
For serving
- 1 lime
- 1 bunch of fresh cilantro
- tortillas, warmed
Preheat your oven to 220°C (425°F). Line a sheet pan with parchment paper or aluminum foil.
Mix together spices for the fajita seasoning.
Slice the bell peppers and onions. Cover the bell peppers and onions with olive oil and half the fajita seasoning until well-coated.
Place the vegetables in a single layer on the sheet pan and roast in the oven for 15-20 minutes.
Coat the shrimp with the remaining spices and olive oil.
Add the seasoned shrimp to the pan with vegetables and roast for an additional 5-7 minutes, or until the shrimp are pink and cooked.
Squeeze fresh lime juice over the cooked shrimp and vegetables, and sprinkle with fresh cilantro, if desired.
Serve the Sheet Pan Shrimp Fajitas hot with warm tortillas, salsa, sour cream, and guacamole on the side. Enjoy!
