Easy Sheet Pan Shrimp Fajitas

Sheet pan shrimp fajitas are a Tex-Mex dish made by cooking shrimp, sliced bell peppers, onions, and seasonings on a sheet pan in the oven. Sheet pan shrimp fajitas have a savory, slightly spicy, and smoky flavor from the seasoning blend of chili powder, cumin, garlic, and smoked paprika. Ingredients
  

Shrimp and Vegetables

  • 300 g shrimp peeled and deveined
  • 2 green bell peppers, sliced thin
  • 2 red bell peppers, sliced thin
  • 0.5 red onion, sliced thin

Fajitas seasoning

  • 2 tbsp olive oil extra virgin
  • 1 tsp salt
  • several turns freshly ground pepper
  • 2 tsp chili powder
  • 1 tsp chili flakes
  • 1 tsp smoked paprika
  • 0,5 tsp garlic powder
  • 0.5 tsp dry oregano

For serving

  • 1 lime
  • 1 bunch of fresh cilantro
  • tortillas, warmed

Instructions
 

  • Preheat your oven to 220°C (425°F). Line a sheet pan with parchment paper or aluminum foil.
  • Mix together spices for the fajita seasoning.
  • Slice the bell peppers and onions. Cover the bell peppers and onions with olive oil and half the fajita seasoning until well-coated.
  • Place the vegetables in a single layer on the sheet pan and roast in the oven for 15-20 minutes.
  • Coat the shrimp with the remaining spices and olive oil.
  • Add the seasoned shrimp to the pan with vegetables and roast for an additional 5-7 minutes, or until the shrimp are pink and cooked.
  • Squeeze fresh lime juice over the cooked shrimp and vegetables, and sprinkle with fresh cilantro, if desired.
  • Serve the Sheet Pan Shrimp Fajitas hot with warm tortillas, salsa, sour cream, and guacamole on the side. Enjoy!
