Mango Quinoa Salad
This refreshing mango quinoa salad with lime dressing makes a perfect side dish or a light, healthy meal.

Quinoa
- 1 cup quinoa, rinsed and drained
- 2 cups water
Salad ingredients
- 1 mango, peeled and diced
- 1 cup cherry tomatoes, halved
- ⅓ cup red onion, finely diced
- ¼ cup fresh cilantro, chopped
- 2 tbsp fresh mint leaves
- Salt and pepper, to taste
Combine the quinoa and water in a pan. Bring it to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes. Remove from heat, fluff with a fork, and allow it to cool to room temperature.
Dice the mango, halve the cherry tomatoes, finely dice the red onion, and chop the cilantro.
Make the Coconut lime dressing, for this mix ¼ cup of fresh lime juice, 2 tbsp of melted coconut oil (or just live oil), 1 tbsp of honey, salt and pepper, to taste and a pinch of chili pepper flakes. In a large bowl, combine the cooled quinoa, diced mango, cherry tomatoes, red onion, cilantro, and mint leaves. Mix gently to combine. Pour the Coconut lime dressing over the quinoa mixture and toss to coat evenly. Serve end enjoy!
