  • 1 cup quinoa, rinsed and drained
  • 2 cups water

  • 1 mango, peeled and diced
  • 1 cup cherry tomatoes, halved

  • Ā¼ cup fresh cilantro, chopped
  • 2 tbsp fresh mint leaves
  • Salt and pepper, to taste
