- 1 tbsp olive oil
- ¼ cup onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 7 oz. diced tomatoes
- ½ cup vegetable broth
- ½ tsp paprika
- ½ tsp dried oregano
- Salt and black pepper to taste
- 3 tbsp heavy cream
- Fresh parsley, chopped, for garnish
- Crusty bread for serving
Start by heating the olive oil in a skillet over medium heat. Saute the chopped onions for roughly 2-3 minutes until they achieve a translucent appearance. Add the minced garlic and continue sautéing for an additional 30 seconds, allowing its fragrance to infuse.
Add the diced red bell peppers to the skillet and cook them for approximately 5 minutes until they display signs of softening.
Incorporate the diced tomatoes along with the vegetable broth. Season with paprika, dried oregano, salt, and black pepper. Let it simmer for about 10 minutes, enabling the flavors to meld and the stew to achieve a slightly thickened consistency.
