Ingredients
  

  • ½ lb. salmon fillets, skin removed and cut into bite-sized pieces
  • 1 tbsp olive oil
  • ½ onion, finely chopped
  • 1 clove of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 5 oz. crushed tomatoes
  • 1 cups fish or vegetable broth
  • ¼ cup heavy cream
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for about 2 minutes until they become translucent and fragrant.
  • Add the diced carrots and celery to the pot. Sauté the vegetables for another 5 minutes, stirring occasionally, until they begin to soften.
  • Pour in the crushed tomatoes, fish or vegetable broth, dried oregano, and season with salt and pepper to taste. Bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let the stew simmer for about 15 minutes or until the vegetables are tender.
  • Gently add the bite-sized salmon pieces to the stew and simmer for an additional 5 minutes.
  • Stir in the heavy cream and let the stew simmer for an additional 2 minutes, allowing the cream to heat through and thicken slightly.
  • Taste the stew and adjust the seasoning with more salt and pepper if needed. Serve the creamy salmon stew hot, garnished with fresh parsley.
