- ½ lb. salmon fillets, skin removed and cut into bite-sized pieces
- 1 tbsp olive oil
- ½ onion, finely chopped
- 1 clove of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 5 oz. crushed tomatoes
- 1 cups fish or vegetable broth
- ¼ cup heavy cream
- ½ tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for about 2 minutes until they become translucent and fragrant.
Add the diced carrots and celery to the pot. Sauté the vegetables for another 5 minutes, stirring occasionally, until they begin to soften.
Pour in the crushed tomatoes, fish or vegetable broth, dried oregano, and season with salt and pepper to taste. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let the stew simmer for about 15 minutes or until the vegetables are tender.
Gently add the bite-sized salmon pieces to the stew and simmer for an additional 5 minutes.
Stir in the heavy cream and let the stew simmer for an additional 2 minutes, allowing the cream to heat through and thicken slightly.
Taste the stew and adjust the seasoning with more salt and pepper if needed. Serve the creamy salmon stew hot, garnished with fresh parsley.
