Protein Granola

Protein granola is a nutritious and satisfying snack or breakfast option that combines oats with various toppings. This granola is refined sugar-free and so easy-to-make!

Ingredients
  

  • 2 cups old-fashioned oats
  • ½ cup vanilla protein powder
  • ¼ cup honey (adjust to taste)
  • ¼ cup melted coconut oil
  • 1 cup mixed nuts and berries

Instructions
 

  • Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, combine the old-fashioned oats and vanilla protein powder. If you like, you can sift the protein powder to remove any lumps.
  • In a separate microwave-safe bowl, heat the coconut oil in the microwave until it's melted. Add the melted coconut oil and honey to the dry mixture. Stir well to ensure that all the oats are coated evenly. The mixture should start to clump together.
  • Spread the granola mixture evenly onto the prepared baking sheet. Bake in the preheated oven for about 20 minutes or until the granola turns golden brown, stirring it every 7 minutes to ensure even baking.
  • Once the granola is done, remove it from the oven and let it cool completely on the baking sheet. As it cools, it will become crisp. After the granola has cooled, break it into clusters and mix in the chopped nuts and dried berries. You can customize the mix of nuts and dried berries based on your preferences. Store the protein granola in an airtight container at room temperature. It should stay fresh for a couple of weeks.
