Lemon Broccoli Shrimp Orzo

Ingredients
  

  • ½ lb. medium or large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 1 cup broccoli, cut into florets
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 cup water
  • Salt and pepper to taste
  • 2-3 tbsp grated Parmesan cheese
  • Fresh parsley, for garnish (optional)

Instructions
 

  • Heat the olive oil in a large skillet or pot over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the orzo pasta to the pot and stir to coat it with the garlic-infused oil. Cook for 2-3 minutes until the orzo turns slightly golden.
  • Pour in the water and lemon juice. Stir well and bring it to a boil. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for about 5 minutes. Stir occasionally to prevent sticking.
  • Add the broccoli florets to the pot and continue to simmer for an additional 3-4 minutes, or until the orzo is al dente and the broccoli is tender-crisp. If the liquid evaporates too quickly, you can add a little more water. Season with salt and pepper to taste.
  • Gently fold in the shrimp and cook for 3 minutes, or until the shrimp turn pink and opaque. Taste and adjust the seasoning if necessary. Sprinkle with grated parmesan cheese. Mix well so the flavors are combined. Remove the pot from the heat, garnish with fresh parsley if desired, and serve immediately.
