Ingredients for 4 waffles (2 serves):
- 1egg
- 80g oat flour (blended oats)
- ~100g coconut milk or milk of choice
- 1 tbsp honey or maple syrup
- 1 tbsp olive oil
- 0.5 tsp baking powder
- 0.5 tsp vanilla extract
Just a couple of words about the ingredients.
Egg
These waffles are healthy not just because they contain oats but also due to the egg added. No secret it is a source of protein, so it’s perfect for the morning meal.
Oat flour
What is oat flour? It’s just blended into powdered oats. I buy already blended, just because don’t wanna spend time on blending. If you don’t want to buy oat flour for this one recipe, then blend your oats and then sift it so its consistency looks like wheat flour. This flour option is much healthier than wheat flour, but the taste is still good! Moreover, oats are nutritionally rich. It has more protein than most grains and also contains numerous vitamins and minerals.
Milk of choice
I like coconut milk without sugar added. You can use what you like. For example, almond milk or soy milk is also good. In the ingredients list, I wrote an approximate amount of milk that will depend on the milk type. Mine coconut takes 100g., other can take a bit less or a bit more.
Honey or Maple syrup
That’s the way we replace sugar in this recipe. I prefer using honey. If you wish to make your waffles less in calories, you can use 0-calorie sweetener (e.x. Erythritol).
Olive oil
This helps our waffles not to stick to the iron; 1 tbsp is enough. You can also use coconut oil if you like. I prefer olive oil.
Baking powder & Vanilla extract
Baking powder makes the waffles fluffy, and vanilla makes a pleasant aroma around the waffles plate and the kitchen. So don’t skip these ingredients.
Let’s jump to the method, it is elementary!
How to make waffles?
1. Mix together all the ingredients till smooth.
2. As for the milk, control the amount, the dough needs to be thick enough, but it has to pour down from the spoon slowly. The consistency has to look like sour cream.
3. Bake according to your waffle iron’s instructions (mine takes ~2mins).
4. Serve with fresh fruit, nuts, and honey. Enjoy!
