How to make Tuna Poke Sushi Bowl

Firstly we have to cook rice. I use rice with a low glycemic index – Basmati as it’s healthier. However, for a Poke Sushi bowl it’s suitable to use Arborio or Sushi rice, such as short-grain Japanese rice.

Wash the rice using a cooking sieve. Then put a pan on medium heat, and place rice in. Add water in accordance with the chosen rice cooking instructions. Cook till it’s ready. Then cool it down and set it aside.

Let’s prepare the marinade for tuna. For this in a large bowl mix olive oil, soy sauce, wasabi, chili flakes and honey. Whisk it till smooth.

Unfreeze tuna if it is frozen. I leave it in the fridge for a night before cooking. Cut it into 1cm cubes.

Transfer the tuna cubes to the bowl with marinade and mix it, so the marinade covers all the tuna pieces. Set aside for marination for about 30 mins.

Prepare the vegetables and fruit. Peel avocado and cut it into 1cm cubes or into slices. I prefer the cubes format more.

Cut the bell pepper into cubes. It’s fair to say that the bell pepper can be replaced with cucumber or other crunchy vegetables. I like bell pepper for its sweet-n-sour taste. A cucumber is also a good option.

Peel and cut the pineapple into 0.5 cm cubes. If you haven’t pineapple, you can replace it with mango, that’s a good alternative. Chop the scallions.

Prepare the dressing sauce. Mix soy sauce and wasabi.
Let’s assemble the bowl. Place cooled rice into the bowl. Then place the marinated tuna pieces on one side, pineapple next to eat, then bell pepper and avocado.

Ingredients
  

Rice

  • 100 g Rice (Sushi rice or rice of choice)
  • 300 g water

Tuna

  • 400 g ahi tuna
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 0.5 tbsp honey
  • 0.5 tsp wasabi
  • 0.3 tsp chili flakes

Fruit and Veggies

  • 0.5 Pineapple
  • 0.5 Red bell pepper
  • 1 Avocado

Seasoning

  • 0.5 tsp Sesame seeds
  • 0.5 tbsp Chopped Scallions

Sauce

  • 2 tbsp soy sauce
  • 0.25 tsp wasabi (to taste)

Instructions
 

  • Wash the rice. Put a pan on medium heat, add place rice in, add water and cook in accordance with the chosen rice cooking instructions. When the rice is ready, cool it down and set it aside.
  • For Tuna marinade mix olive oil, soy sauce, wasabi, chili flakes and honey in a large bowl. Whisk it till smooth.
  • Cut tuna into 1cm cubes. Transfer the tuna cubes to the bowl with marinade and mix it, so the marinade covers all the tuna pieces. Set aside for marination for about 30 mins.
  • Peel avocado and cut it into 1cm cubes or into slices. Cut the bell pepper into cubes. Peel and cut the pineapple into 0.5 cm cubes. Chop the scallions.
  • For the dressing sauce mix soy sauce and wasabi.
  • Assemble the bowl. Place cooled rice on the bottom of the bowl. Then add marinated tuna pieces, pineapple, bell pepper and avocado.
  • Sprinkle tuna with chopped scallions and sesame seeds. Dress the bowl with wasabi-soy sauce. Enjoy!
