Let’s begin with the preparation of the Marinara sauce. Finely chop garlic, onion and celery. Chop parsley. We’ll add it at the end of the cooking.

Place a saucepan on medium heat. Add olive oil, onion and garlic and fry them till fragrant (for about 3-4 mins), stirring occasionally.

Add chopped celery and mix. Stew the vegetables for a couple of minutes so they get softened.

Add white wine to the saucepan, and let it simmer for about a minute. You’ll feel a nice aroma!

Pour diced tomatoes and mix them with the wine and vegetables. Add salt, pepper, oregano and sugar, and let it simmer for 2 mins so all the added ingredients could open their flavors. The marinara sauce is ready!

Place the mussels into the sauce and mix so the sauce covers all the mussels. Decrease the heat to low and let it being cooked for 10 mins.

While the mussels are being cooked, let’s cook the pasta. Place a pot on high heat, and let it starts boiling. Then add a pinch of salt and pasta, I chose linguine type. Cook till al dente in accordance with pasta package instructions. Mine took 12 mins.

When the time of cooking is up, add parsley to the sauce.

Drain the pasta and add it to the Mussels Marinara. Mix well. The Mussels Marinara Pasta is ready to be served.

Mussels

  • 200 g Mussels meat

Marinara sauce

  • 300 g crushed or diced tomatoes
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 0.25 onion
  • 3 celery stalks
  • 100 g white wine
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp dried oregano
  • 1 tsp sugar
  • 1 bunch parsley

Pasta

  • 140 g spaghetti, linguine, or fettuccine
  • 0.5 tsp salt

Instructions
 

Marinara sauce

  • Finely chop garlic, onion and celery. Chope parsley.
  • Fry onion and garlic with olive oil on medium heat till fragrant (for about 3-4 mins), stirring occasionally. Add chopped celery and mix. Stew them for a couple of minutes.
  • Add white wine and let it simmer for about a minute.
  • Add diced tomatoes, salt, pepper, oregano and sugar, mix well and let it simmer for 2 mins.

Mussels

  • Place the mussels into the Marinara sauce, and mix well. Cook for 10 mins on low heat under the lid.

Pasta

  • Cook chosen pasta till al dente in accordance with pasta package instructions.

Finalizing the dish

  • Add parsley to the Mussels Marinara and then transfer cooked pasta there and mix well.
  • Serve with some Parmesan cheese and freshly ground black pepper. Enjoy!
