How to make Strawberry Crumble
Preheat the oven to 180°C.
In a large bowl mix dry ingredients for the bottom shortbread layer of the crumble (oat and almond flour, a pinch of salt and vanilla powder), and whisk to combine. Add honey and coconut oil and knead the dough with your hands.
Line the 4,7*7,8 inch (12*20 cm) baking dish with the baking parchment and spread the shortbread dough on the bottom of it. Bake in the oven for 8mins.
While the shortbread is being cooked let’s prepare the strawberry filling. Cut strawberries and place them in the bowl, add lemon juice, honey and cornstarch and mix. Set aside.
In a bowl mix dry crumble ingredients (almond flour, oats and oat flour). Add the coconut oil and honey and mix it well with your hands till it gets a sand-like texture.
